Analysis of Different Methods of Cassava Flour Processing

Introduction:

How many ways are there to process tapioca? Which is better?

Cassava flour is a highly demanded ingredient in various industries, and different processing methods yield varying results. In this blog post, we will analyze the two main methods of cassava flour processing - dry and wet methods. We will decipher the advantages and disadvantages of each, allowing you to make an informed decision for your cassava flour production.

Dry Cassava Flour Processing:

Also known as the "dry method," this technique involves minimal water usage. The dry cassava flour processing procedure includes cleaning, peeling, slicing, drying, and grinding the harvested cassava. The cassava is initially cleaned, removing any surface dirt and impurities, followed by peeling. The peeled cassava is then sliced into pieces or blocks, which are either sun-dried or dried using an automated drying machine. Finally, the dried cassava slices or blocks are milling into fine powder, resulting in the finished cassava flour.

The dry cassava flour processing method offers several advantages. Firstly, it requires lower overall investment costs, making it suitable for large-scale cassava flour production. Daily production volumes of several hundred tons are attainable using this method.

Wet Cassava Flour Processing:

Unlike the dry method, the wet cassava flour processing technique involves water usage. The procedure includes washing, crushing, dewatering, and drying the cassava. The cassava undergoes two washes, a dry wash, and a water wash, to remove surface impurities. It is then crushed via coarse and fine milling, creating a slurry. The slurry is then sent for dewatering using a plate and frame filter press, followed by drying using air flow dryers.

While the wet cassava flour processing method offers benefits such as improved efficiency and higher product quality, it comes with certain drawbacks. The overall investment cost for this method is significantly higher, making it less suitable for large-scale cassava flour production.
